Roasted Cabbage Slices

Ingredients
  • 1 head of cabbage
  • 3 tablespoons of oil-coconut oil, olive oil, etc
  • Salt and Pepper to taste
Instructions
  1. Preheat the oven to 400 degrees.
  2. Slice the cabbage. Aim for ¼-1/2 inch slices.
  3. Oil a baking sheet with 1 tablespoon of the oil. Place the cabbage on the baking sheet and drizzle with the remaining oil. 
  4. Sprinkle with desired spices and place in the oven.
  5. Roast for 35-40 minutes or until tender in the middle and sides are just starting to turn golden brown. 
  6. Remove and serve.


Crock-pot Shredded Chicken

Ingredients
  • Boneless skinless chicken breasts
  • Salsa of your choice
  • Onions and peppers (optional)
Instructions
  1. Place chicken breasts, salsa, and onions/peppers into crock-pot.
  2. Set on low for 6 hours
  3. Once time is up, the chicken will shred very easily
I usually put mine on a soft shell tortilla and top with fat free cheese but you can also eat it alone and it is full of flavor. I also saute slices of zucchini and add to it.
